THE TEA FARM

Oolong art from Nantou

Classic Tung Ting comes from high-altitude tea gardens in Nantou County, Taiwan – between 1,000 and 1,300 meters above sea level.
Here, fog and sun alternate, the nights are cool, the soil is mineral-rich – ideal conditions for elegant oolongs with depth and clarity.

The leaves are briefly withered, gently shaken (yaoqing), slightly oxidized (approx. 40–50%) and then fixed by heat.
The characteristic "ball rolling" process then takes place, in which the leaves are rolled into firm balls and gently dried. A light roasting rounds off the profile without overpowering it.

TEA FARM

Small, local gardens focusing on Jin-Xuan cultivars and precise processing – traditional, not industrialized.

TERROIR

Altitude of 1,000–1,300 m, mineral-rich soils, cool nights. Fog protects the leaves and intensifies the floral sweetness.

ORIGIN

Dong Ding (Tung Ting) is one of the oldest Oolong styles in Taiwan – the “Jade” style represents bright, floral, lightly roasted interpretations.

Classic Tung Ting

Classic Tung Ting comes from high-altitude tea gardens in Nantou County, Taiwan – between 1,000 and 1,300 m.
Cool nights, fog, and mineral soils shape the leaf. The leaves are withered, gently shaken, lightly oxidized (40–50%), then fixed by heat and traditionally rolled into compact pellets.
A gentle roasting process rounds off the tea – without dominating it. The result: An oolong with natural floral notes, a clear structure, and a harmonious flow.

PREPARATION

Pour 2.5g per 200ml of water at 85°C-90°C .
5 steps : 2-3 minutes

CAFFEINE CONTENT

Mild to moderate (typical of oolong) | Calm alertness thanks to theanine – ideal for late mornings or focused afternoons. Only suitable for evenings if well tolerated.

A warm, bright golden yellow with amber reflections – clear, calm, inviting.
