What is white tea?
White tea is the most gently processed type of tea. After harvesting, buds and young leaves are withered in the air for hours or even days. During this time, a very slight, natural oxidation process begins. The leaves are then gently dried – without pan roasting, without drum roasting, and without any additives.
The result is bright, calm infusions with a delicate sweetness, floral notes, and often a subtle hint of hay or fruit. Compared to green tea, white tea tastes softer and less "green," while remaining clear and transparent in the cup. When prepared correctly, it exhibits hardly any bitterness and very little astringency.
All white teas are clearly labelled according to their origin (Fujian, high-altitude regions, etc.) and described in detail: plucking standard, processing, aroma, and preparation. This allows you to get a sense from the description alone of whether you prefer a sweet, blossom-honey flavor, a fruitier taste, or something even more delicate.
White tea at NOEMA – our styles
Pai Mu Tan (White Peony)
A classic white tea from Fujian with blossom honey, white peach/pear, and a gently nutty aftertaste. Soft, silky, and lightly sweet – a very approachable white tea for everyday enjoyment.
Snow Silent
Highland white tea from an altitude of approximately 1,000 meters, with light blossoms, white fruit (pear/apple), and a delicate, warming spiciness. The brew remains silky clear, and the sweetness develops slowly over several infusions.
Downy Silver Needle
Pure bud tea with silvery down, delicately floral, almost weightless in the mouth. Ideal if you want to experience the finest, most minimalist white tea profile.
How to properly prepare white tea
White tea is uncomplicated, but sensitive to temperature – especially if you want to preserve its delicate floral and honey notes. As a starting point:
• Many white teas are ideally stored at 75–85 °C,
• Western-style brewing times: 1:30–2:00 min for the first infusion, then increase slightly,
• In the Gongfu style, short, gradually increasing infusions are preferred, as described on the product pages.
General guidelines that you can briefly mention in the text:
• Always pour completely to prevent the tea from continuing to steep.
• If the cup tastes too "hay-like" or slightly bitter → lower the temperature or shorten the brewing time
• The tea has a very mild effect → steep for a slightly longer time or use a little more leaf for the second infusion
This keeps white tea clear, soft and calm, without bitterness – leaving plenty of room for the subtle aromas.
Which white tea suits you best?
If you are looking for a soft, blossom-honey sweetness, Pai Mu Tan is a good starting point: floral notes, bright fruit and gentle nuttiness – very suitable for long afternoons and quiet breaks.
If you prefer something even lighter, almost floating, Snow Silent or Downy Silver Needle will lead you towards the finest white tea elegance: bright blossom, white fruit, honey-soft depth – perfect for quiet moments when you consciously want to slow down.
White tea can provide you with clear, mild energy throughout the day; many also drink it in the late afternoon because it is often perceived as gentler than strong green or black teas. On the product pages, you'll find information about caffeine content and mood – allowing you to choose the specific effect you need.
