AROMA & CHARACTER

Bright floral and honey notes with hints of white peach/pear and delicate hay. On the palate, soft, mildly sweet, and silky, with minimal astringency and hardly any bitterness at 80–85 °C. With further infusions, the sweetness becomes more rounded, revealing a touch of fine nuttiness, while the finish remains clear and calmly mineral.

White leaves from Fujian

Pai Mu Tan originates from Fujian, the home of traditional white teas. It is harvested in spring, typically as a bud plus one or two young leaves. After picking, the leaves are withered in the air and gentle sunlight for hours to days. This process initiates a very gentle, natural oxidation without roasting or intense heating.

The leaves are then gently dried and sorted. This minimalist processing preserves the blossom honey sweetness, the bright, clear cup, and the smooth, soft texture – all natural, without additives.

The tea

Pai Mu Tan

Pai Mu Tan is a tea that works through time, not pressure. Because the leaves are only withered and dried, their "energy" is very open: temperature and steeping time determine whether the cup will be fragrant and light or rounder and deeper. A short steeping leaves it light, transparent, and floral. Give it more time, and it develops texture, the sweetness becomes honey-like, and a subtle, nutty warmth emerges in the background.

It's remarkably forgiving. White tea rarely turns harshly bitter if you don't brew it too hot. Pai Mu Tan is therefore well-suited for multiple infusions throughout the day: the first few are airy and clear, later it becomes calmer, more mineral, and "warmer" without becoming heavy. A tea that doesn't change because it gets louder – but because it opens up further.

PREPARATION

Pour 5g per 200ml of water at 75–80 °C .
3 infusions : 2 min. fragrant & light / 3 min. rounder & honey

CAFFEINE CONTENT

Mild to moderate (typical of white tea) with theanine. Calm, clear energy, pleasantly smooth. For late evening only if well tolerated.

CUP COLOR

A bright golden yellow with warm reflections – depending on the steeping time, it can be lighter and more transparent or slightly more amber.
