Green tea – origin, processing and effects
Green tea comes from the same plant as black tea, but the processing differs: After harvesting, the leaves are heated to stop oxidation – usually in a pan in China, and predominantly with steam in Japan. This preserves the fresh, green notes, the light color of the brew, and the typical amino acids such as L-theanine.
Green tea combines caffeine with a calm, clear alertness. Many people drink it in the morning or early afternoon to concentrate on working, reading, or studying without their heart rate getting too high. The effect depends on the variety, brewing time, and temperature: shorter brews often produce a brighter and fresher feeling, while longer brews offer more depth and structure.

How to properly prepare green tea
To prevent green tea from becoming bitter, temperature and time are crucial. For most of our green teas, we recommend 70–80 °C and short brewing times, which you can adjust to your taste. You'll find precise information on weight, temperature, and brewing times on the product pages – for both Gongfu-style and classic teapot brewing.
Use the softest, filtered water possible and pour the tea completely so that the leaves can "rest" between infusions. Many varieties can be infused two to three times, and more delicate teas often even more frequently.
Which green tea suits you best?
If you enjoy mild, nutty teas, Lung Ching or Mao Feng are a good starting point. If you're looking for something particularly floral, Silver Pearl or Jasmine Dragon Pearls might be a good fit. For concentrated rituals with intense color and umami flavor, Matcha is suitable; Hōjicha powder is ideal if you want something very soothing for the late afternoon or evening.
