This is how the tea tastes

AROMA & CHARACTER

Warm grain, roasted nut, and a hint of caramel rise to the surface first. On the palate, the tea is soft and rounded; the roasting softens any sharpness, leaving a gentle, grainy sweetness. Prepared with water, the profile remains dry, clear, and airy – with milk, it becomes creamier, more chocolatey, and perfect for a latte.

Noticeably less caffeine than Matcha/Sencha, therefore often pleasant even later in life.

Nutty warmth and caramel notes without any bitterness.

In milk it becomes round, powdery and dessert-like, without seeming heavy, and a pinch of salt enhances the caramel note.

THE TEA FARM

yournoema_puerh_verarbeitung_raum - Noema

Japan's Hōjicha craft

For Hōjicha, pre-processed Japanese green teas (often Bancha or Kukicha) are roasted after steaming. This creates the typical roasted notes; at the same time, the tea becomes milder and less astringent. For powder quality, the roasted leaves are ground very finely so that they can be whipped directly, like a "roasted tea latte," only clearer.

TEA FARM

Selected from Japanese green tea batches that are characterized by a calm, clean roasting profile.

TERROIR

What is crucial here is not so much the altitude, but the interplay between the base material (Bancha/Kukicha) and gentle roasting.

ORIGIN

Hōjicha is a Japanese specialty: roasted green tea with a deliberately mild profile – made for everyday life, relaxation and late cups.

The tea

Hojicha Powder

As a powder, Hōjicha behaves differently than leaf tea: you control the intensity not through steeping time, but through dosage, temperature, and whisking. At 75–85 °C, the aroma dissolves cleanly without drying out. Stirring briefly (pasture first, then dilute) results in a smoother texture and a more rounded sweetness. In milk, the caramel, nut, and cocoa notes become more pronounced; in water, it remains clear, roasty, and balanced.

PREPARATION

Pour 1-2 g per 100 ml of water at 80°C .
1 infusion : For latte: Mix powder with a little hot water, then add warm milk or plant-based milk and froth. For tea: Dissolve powder directly in hot water.

CAFFEINE CONTENT

Mild (typical of hojicha). Due to roasting and the frequently used base material (bancha/kukicha), it is usually significantly milder than matcha or sencha – noticeably so, but rarely "pushy".

CUP COLOR

With water: light chestnut brown to warm caramel.
As a latte: creamy beige with a roasted undertone.
