AROMA & CHARAKTER

On the nose, sweet, fresh green aromas with subtle hints of steam and nori. On the palate, dense and creamy, with a clear umami depth and a soft, slightly sweet finish. At 65–70 °C, Hisui tastes rounder and sweeter; at 72–75 °C, a bright freshness emerges, along with a very controlled, pleasant bitterness. The aftertaste is long, velvety, and smooth.

Ceremonial Matcha Hisui

Matcha isn't an infusion tea – you drink the leaf. Therefore, particle finesse (creamy rather than gritty) and the way you prepare it are crucial. For a clean, elegant profile, use less powder or more water (Usucha style). For a rich, deep profile, increase the powder and reduce the water (closer to Koicha, without making it heavy).
Important: First sieve, then "dissolve" with a little water, then whisk – this makes Hisui stable, smooth and sweet.

ZUBEREITUNG

1–1.5 g per 100 ml of water bei 70 °C aufgießen.
1 infusion: Beat vigorously for 20 seconds

KOFFEINGEHALT

Moderately strong (typical of matcha) with a high theanine content: clear, focused alertness, often calmer than coffee. Ideal in the morning or before periods of concentration; in the evening depending on individual tolerance.

TASSENFARBE

A jade green with a fine, creamy foam. The higher the dosage, the richer and more opaque the color appears.

Matcha craftsmanship (Tencha & Mill)

For matcha, tencha leaves are shaded before harvesting to increase the concentration of chlorophyll and amino acids (theanine), resulting in a smoother cup. After steaming, the leaves are dried, stripped of stems and veins, and then gently milled. This creates a fine powder that doesn't dissolve in water but is whisked – giving it its dense, creamy texture.
